Braised Lamb Shank
4 lamb shanks
4 potatoes cubed
1 cup carrots
salt and pepper
2 cinnamon stick
oil for braising
Braise lamb shank in 1/4 of desired oil,
on both sides lay in bottom of crockpot or stew (cook a dutch oven in the oven 325*
for 1 1/2-2 hours til done)pot, layering rest of ingredients, cover with water and cook high in crook pot till water is very hot then turn down to low and cook till meat slides on bone:) I start at night and cook till next day.

Lamb Burgers Stuffed with Chevre Cheese
1lb. ground Lamb or Goat burger
1/2 cup Italian bread crumb
2 beaten eggs
1/2 cup diced onions
4 garlic cloves minced
handful of fresh cilantro or parsley
4oz. of "Get Your Goat On" Chevre cheese
Saute minced garlic with onions in a skillet over medium heat. Set aside, mix remaining ingredients, add cooled sauteed ingredients. Make into thick patties. With a finger make a hole in middle of patty and stuff with Chevre than cover hole. Grill till completely cooked. Serve on pasta, drizzle with virgin olive oil, garnish with cilantro or parsley.
